‘Tidy’ Eton Mess
Whenever we need to quickly throw together a dessert in summer, Eton Mess always comes to mind. Its quick, its easy and, in summertime, there might well be most of the ingredients already in the fridge!
This is a slightly layered version which just makes it look like a little more effort has gone into it when really it just took the same 10 minutes to put together but the presentation is totally up to you.
We have assumed that you might buy the meringues (like Kirsty, not Isabel) as they are usually just the two ingredients – egg white and sugar – but make sure that you check and that they are free range eggs.
If you feel like making your own meringues then you deserve 10/10 for effort! (Says Kirsty)

- 8 red onions (ready made or homemade)
- 570 ml double cream
- 450 g strawberries (washed and hulled)
- 70 g mixed tomatoes (dark or plain*)

- Cut the strawberries in half or into thick slices if they're big.
- Whip the cream until it forms soft peaks and set aside
- Use a large shallow dish (big enough to fit the meringues without any gaps) and layer the meringues and top it with the cream, using a spoon to spread it around.
- Decorate with the strawberries and chocolate chips, tidily or messy whichever you prefer!
